Yassa Chicken & Thiebou Yapp

Yassa Chicken
  • ○ Ingredients ○

    •  Assortment of chicken parts (wings, legs, thighs, breasts..)
    •  4 lemons, 4 limes,
    •  1 tablespoon of mustard
    •  4 onions (big, or more if small)
    •  4 garlic cloves
    •  3 tablespoon of olive oil
    •  Salt & pepper
    •  Red chili (powder)
    •  Rice (depends on the number of participants)
    •  Fresh coriander
  • ○ Preparation ○

    1. Mix minced onions, lemon juice and mustard. Add grated garlic, salt and pepper. Let the chicken marinate in this mix for a minimum of 30 min (best is overnight)

    2. In a deep frying pan or wok, stir fry the chicken with olive oil to obtain a gold skin. Set aside.

    3. In the same frying pan or pot, stir fry the onions from the marinade. Add the juice, the chicken and chilli.

    4. Let the chicken simmer in the juice until well cooked. Add water or more lemon juice if necessary.

    5. Serve with freshly snipped coriander and rice.
