Feijoada (Black Bean Stew)

Feijoada
  • ○ Preparation ○

    1. Soak the beans overnight with the bay leaves.

    2. Boil water in a kettle or medium cooking pot.

    3. Drain the soaked beans and put them in a large cooking pot with the smoked pork ribs, the smoked sausage and the paio, and fill with enough boiling water to cover beans by 2 inches.

    4. Bring to a boil, then reduce heat to medium-low, and simmer uncovered, adding more boiled water as the sauce is reduced, for about 2 hours.

    5. Put the bacon in the frying pan on low heat. Fry until golden colour. Add to the beans.

    6. Next, heat the oil in a large frying pan. Add the chopped onion and garlic; cook and stir until softened, about 4 minutes. Add to the beans.

    7. When the sausages are cooked, take them out of the pan and slice them into 1-inch pieces, and put them back in the pan to boil.

    8. Let the beans simmer for about 30 minutes to 1 hour, uncovered, then add the chopped green onions, cilantro and parsley shortly before serving.
