Couve (Sautéed Collard Greens)

  • ○ Ingredients ○

    • 1 bunch of collard greens
    • 1 clove of garlic, pressed
    • 1 tablespoon of vegetable oil
    • Salt to taste

  • ○ Preparation ○

    1. Wash the collard greens and remove the excess water by shaking them or by using a salad spinner.

    2. Cut off the hard stalk of the collard greens.

    3. Place the leaves on a cutting board and put them all into a neat pile.

    4. Roll the leaves sideways tightly and hold them together.

    5. Slice this “roll” thinly and evenly (watch your fingers!).

    6. Heat the oil in a frying pan or wok.

    7. Add the garlic, fry it until it is golden brown, and then add the collard greens.

    8. Sautée the collard greens until they are bright green. Add the salt and serve.
