It is also enlightening to know that mole is a collective name of different Mexican sauces: black, red, yellow, Colorado, green, almendrado, and pipián. We used black mole, which is really tasty. We used Nopalitos [in the picture] as a garnish for this dish. To be honest, Rudy told us that this Nopalitos was not as good as the Nopalitos that he knew, but the mole was the same.
