Käsespätzle

You may have seen Spätzle in Swiss, German, and/or Hungarian restaurants. Spätzli is often regarded as an egg noodle, but it may be something between noodle and gnocchi. The process to make spätzle (= little sparrow) is interesting (the details are below).

When I asked Fabian about how he learned how to cook different German dishes, he told us that the "scraping" of the Spätzle was something he actually learned by himself after several people told him how to do it!!
