Tyropitas

Tyropitas
  • ○ Ingredients ○ (makes 32)

    • 1 scant cup authentic Greek feta cheese
    • 1/2 cup cottage cheese
    • 3 tbsp chopped fresh flat-leaf parsley
    • 2 eggs, beaten
    • Pepper
    • 8 sheets authentic Greek phyllo pastry
    • 1/2 scant cup olive oil

  • ○ Directions ○

    1. Crumble the feta cheese into a bowl. Add the cottage cheese, parsley, and eggs and beat with a fork until well blended. Season with pepper.

    2. Cut the phyllo pastry, down the longest length, into 2 3/4 inch (7cm) strips.
     Take one strip and cover the remaining strips with a damp dish towel.
     Brush the strip with olive oil and put a heaping teaspoon of the cheese mixture on the bottom left-hand corner.
     Fold over the corner with the filling so that it meets the long side edge and forms a triangle.
     Continue folding the filling up and over from side to side to form a neat triangle.
     Place the pastry on an oiled baking sheet and brush with oil.
     Continue until all the pastry strips and the filling have been used.

    3. Bake the pastries in a preheated oven, 375F/190C for about 15 min until golden brown. Serve hot.
