Snert or Erwtensoep (Thick Dutch Pea Soup)

How to make Snert

For Non-Vegetarians

○ Ingredients ○

• 500g split peas
• 2 liters of water
• 600 gram of stew beef
• 2 smoked sausages
• 1 celeriac
• Leaf celery
• 2 good sized leeks
• Beef stock, or vegetable stock
• 4 bay leaves

○ Special tools ○

Skimmer (Spoon with holes)

○ Preparation ○

• Rinse the peas in cold water, in a strainer or a sieve.
• Remove the outer layer of the celeriac, cut in 1 cm thick pieces and cut these in cubes.
• Peel the potatoes and cut them in cubes.
• Clean the leeks by removing the roots, cutting them lengthwise and rinsing the sand from between the leaves.
• Cut in fine pieces.
• Chop the celery. When using carrots, peel the carrot and cut it in cubes.

○ Directions ○

• Put 2 liters of water in a pan and add the meat.

• Bring this to the boil and remove the foam with a skimmer.

• Add the stock, the peas, and the bay leaves.

• Let this boil for about 1.5 hours.

• Remove the meat from the soup, remove access fat and cut the meat in cubes and add it back to the soup.

• Add the celeriac, the potato, leeks and 2/3 of the celery.

• Bring to the boil, add the smoked sausage and let it cook gently, on low heat for another 45 minutes.

• Stir occasionally.

• Remove the sausage and the bay leaves.


Snert
• Cut the sausage in slices and add back to the soup.

• Season with salt and pepper.

• Serve with rye bread with (cream) cheese.

Snert

○ Tips and tricks regarding pea soup ○

• Can be kept in freezer for up to 6 months
• Make it the day before so it really gets thick, otherwise add some potato.
• If you don’t cool the soup rapidly it may get sour/bad, so cool it by putting the pan in a bowl with ice water.
• Heat it slowly or it might burn. Stir well on the bottom


For Vegetarians

○ Ingredients ○

• 500g split peas
• 2 liters of water
• Vegetable stock
• 2 onions
• 2 leeks
• Half celeriac
• 2 potatoes
• Salt and pepper
• Vegetarian smoked sausage or smoked tofu.

○ Directions ○

• Bring the water with the peas to the boil.

• Skim the foam. Finely chop the leeks and onions.

• Cut the celeriac in cubes.

• Add the vegetables to the peas after they have boiled for half an hour.

• Keep boiling until the peas break apart. (30 to 40 minutes).

• Heat the smoked sausage in a different pan and add at the end of the cooking time,
or cook add the smoked tofu for the last 10 minutes of cooking.
